In this course, we present a precise, creamy, and profoundly Mediterranean dish. Chef María José San Román uses rice as part of our culinary identity, always using fresh, local produce. It is accompanied and illuminated by an Atlantic wine with a slightly saline touch that cuts the rice's mellowness and cleanses the palate between bites, enhancing the tuna`s marine flavors without competing with them, creating a very natural balance that blends perfectly with the rice's texture. Jorge Pérez found a feudal manor house with more than 400 years of history abandoned and in ruins in Lentille. He completely restored it and created Bodegas L'Ombre, where he produces this seven-year-old Caiño Blanco in the Ribeiro region, using recovered vines over 80 years old and possessing an incredible mineral structure. The pairing doesn't seek to impose itself, but rather to create a dialogue between the sea and wine, between the Mediterranean and the Atlantic, through harmony and affinity.
