We start the menu with one of the greatest legacies of Alicante's winemaking tradition, which was also designated by the Ministry of Agriculture as the Best Wine of Spain in 2020. Fondillón is an unfortified fortified wine, made with the Monastrell variety and produced exclusively in Alicante. The grapes over-ripen in the vineyard and then are dried for at least a couple of weeks. It is vinified and aged in 1,500-liter oak barrels, where it will remain for 20 to 25 years before being released. It's a wine steeped in history, from centuries-old vines that have been on the verge of disappearing on many occasions. The contrast between its liqueur and nutty notes and the Mediterranean and citrusy orange flavor offers a unique experience of new heights that's hard to forget.
