To round out this experience, we suggest a dessert full of contrasts. It's a combination that plays with the elegant bitterness of fine-aromatic cocoa and hazelnuts. Virunga chocolate, of Congo origin, has a vibrant aromatic profile, with a clean bitterness, notes of red fruits, and a very distinctive acidity. Hazelnut ice cream provides creaminess, freshness, and a very delicate background. To accompany it, we have chosen a Macaronesia wine, unique in the world, both for its production method and its varieties, which offers the perfect balance of sweetness, acidity, and depth. On the palate, we find notes of caramel, walnuts, candied orange peel, and sweet spices, which harmonize very naturally with the profile of the chocolate. What makes this combination special is how the Madeira enhances the noble bitterness of the cocoa while simultaneously highlighting the nuances of hazelnut, creating an enveloping, warm, and lingering sensation.
